Friday's Featured Recipe.. Hamachi Nachos.. Hamachos by Jason King



I'm often skeptical of cookbooks, or recipes. Cooking is not a static map. If maps were like most recipes, we would always end up two towns over, but generally close to where we were headed. 
With my curmudgeoness out in the open, just know any recipe I share is but a starting point for your creativity.

Hamachos... Hamachi Nachos


1 pound sushi grade Hamachi. (you can use ahi tuna as well)
4 wonton sheets
1 jalapeño
1 avocado
1 mango
Siracha sauce to garnish
Soy sauce to taste
Wasabi and pickled ginger
Cilantro
One egg

In a shallow pan, add one egg, soy and siracha, mix well. Place wontons in dish till soaked. Place in a waffle iron to form shape. A panini press will work too. After pemoving from waffle iron, flash fry and set aside.

With sharp knife cut half the mango into thin slices, small dice the remaining mango. Slice avocado into thin slices. Lastly, thin slice the hamachi. Drizzle the hamachi with soy sauce, set aside.

Layer three wonton chips onto a plate. Add mango and avocado slices. Place a few dots of siracha. Place last wonton chip on top, and drape soy dressed hamachi around and over last layer. Add thin jalapeño slices with remaining avocados and mango. Garnish with siracha, soy, cilantro, and small dice mango. Eat it.
